The combination of the creamy canned coconut milk, the cashews and the fermentation make a really thick and creamy vegan yogurt. It is an easy recipe; We prefer to use apple cider vinegar in our cashew sour cream.

Transfer to a heatproof dish, place plastic wrap directly on the surface of the sour cream and chill in the refrigerator for 1 hour or until cool and set. Soak the cashews overnight or in hot water for at least 1 hour. Cashews add the ultimate creaminess and texture to this recipe.

If you'd like to add an extra hint of flavor to your vegan sour cream, adding granulated onion will do the trick. I usually add 1 ¼ teaspoons. You can then either use the non dairy sour cream immediately or store it in the fridge for later usage.

This raita comes together super fast. Serving size is 1/4 cup. Seed and grate the cucumber and add to a bowl with the yogurt, fresh mint and cilantro, sour cream (if using), lemon juice, garlic and spices.
